Refrigerator Soup


When I was a young girl, my mom would make what she called, "Refrigerator Soup". This was a soup made from whatever viable leftovers we had in the fridge. I remember it was always delicious!

Today, I made a whole food/plant based version of Refrigerator Soup.

The "recipe" went something like this:
Steam 2 peeled and chopped sweet potatoes with 2 cups frozen broccoli until they can be pierced with a knife easily (I steamed them to cook quickly, keep their texture, but not lose the water they're cooked with).  Puree 4 cups left over asparagus, 1.5 cups left over baked banana squash, and one pared Golden Delicious apple with about 1 cup water. In a large pan, saute on medium heat some leek and 1 clove garlic in 2 tsp. coconut oil until a little soft (about 2 min). Add 1/4 tsp. smokey paprika and 1 tsp. ancho chili powder to leek/garlic and saute another minute or two. Add cooked potatoes, broccoli, asparagus/squash/apple puree, the water from the steamer, and stir. Heat on low heat to heat thoroughly. Add 1/2 tsp. sea salt, if wanted, just before serving. (everything but the asparagus was organic)

Sweet, smokey, and hearty!
