Refrigerator Soup


When I was a young girl, my mom would make what she called, "Refrigerator Soup". This was a soup made from whatever viable leftovers we had in the fridge. I remember it was always delicious!

Today, I made a whole food/plant based version of Refrigerator Soup.

The "recipe" went something like this:
Steam 2 peeled and chopped sweet potatoes with 2 cups frozen broccoli until they can be pierced with a knife easily (I steamed them to cook quickly, keep their texture, but not lose the water they're cooked with).  Puree 4 cups left over asparagus, 1.5 cups left over baked banana squash, and one pared Golden Delicious apple with about 1 cup water. In a large pan, saute on medium heat some leek and 1 clove garlic in 2 tsp. coconut oil until a little soft (about 2 min). Add 1/4 tsp. smokey paprika and 1 tsp. ancho chili powder to leek/garlic and saute another minute or two. Add cooked potatoes, broccoli, asparagus/squash/apple puree, the water from the steamer, and stir. Heat on low heat to heat thoroughly. Add 1/2 tsp. sea salt, if wanted, just before serving. (everything but the asparagus was organic)

Sweet, smokey, and hearty!

Pizza Hummus

1 can organic garbanzo beans, drained and rinsed
2 Tbsp. tahini paste
2 cloves garlic
1 tsp. dried oregano
2 tsp. dried basil
1 tsp. crushed red pepper flakes (optional)
1/4 cup nutritional yeast
3 oz. organic tomato paste
dash of sea salt
water

- In a food processor, blend beans, garlic, tahini, and a little water for consistency until well combined.  Add spices, nutritional yeast, and tomato paste and blend.  Add water as necessary to keep a smooth consistency.  Scrape sides as needed.  Blend for approximately 3 minutes, or until smooth.  Serve with veggies or toasted Food for Life Sprouted corn tortillas, cut in strips.

Nature and Nurture

In his book "Biology of Belief", Dr. Bruce Lipton postulates that we are much more a product of our thoughts and environment than our genetics.  The evidence he gives in the book is compelling:  We are not victims of genetics but rather self-aware beings who are capable of acting versus being acted upon.

As I reflect on how this idea has played out in my life, I would have to agree with Dr. Lipton.  And that makes me feel much more empowered!

Our bodies show us in a physical way that which we think about consistently.  And just like how the Spirit communicates with us through the whispers of the still, small voice, so does our body speak in subtle whispers.  However, if we ignore these whispers, our bodies will begin to yell.

What better way to heal and honor ourselves, both spiritually and physically, than taking in only that which is constructive - the building blocks of health and wellness.

How to approach making these changes is an individual and personal journey.  Those times when we feel unsure of where to start or afraid of what the changes will mean, remember what we learn in 1 Corinthians 12.  The Apostle Paul teaches us that we are ALL endowed with diverse spiritual gifts.  These gifts are many and not restricted to a selective few.  The chapter ends with the wise counsel to "...covet earnestly the best gifts."

Use the gifts you were born with and cultivate those you desire.



Whole food, plant based pot luck

Autumn is probably my favorite season here in Utah.  The weather is cooler, the mountains are dotted in vibrant colors, and squashes of all types are ready for their final harvest.  Seems like a perfect time for a celebration!
